On February 14th, we celebrate Valentine’s Day. While it is often difficult to find the perfect present for your special someone, a romantic breakfast is always a great gift. Indeed, as Pippa Middleton states in her book, Celebrate: “The way to a lover’s heart is through the stomach.”
For those of you who, like William and Catherine, have young children, it is always nice to celebrate in the morning on Valentine’s Day – especially when schedules can be busy during the day and even into the evening.
So celebrate Valentine’s Day with a delicious breakfast of Eggs Benedict! Here is the recipe, which comes from Pippa’s Celebrate:
Eggs Benedict
Service 4
Ingredients
4 eggs
2 English muffins
4 slices of ham
Jar of Hollandaise sauce
White wine vinegar
Cayanne or ground black pepper
Butter
Half 2 English muffins horizontally and toast until golden.
Divide between the plates, spread lightly with butter and arrange a slice of ham on each.
Warm a jar of store-bought Hollandaise sauce.
To cook the eggs, bring a deep pan of water to a boil and add a generous splash of white wine vinegar.
Crack 4 eggs into separate small cups or ramekins.
Use a wooden spoon to create a whirlpool and carefully drop the eggs in.
Let them cook for 2 to 3 minutes and remove using a slotted spoon.
Drain briefly on a paper towel before placing the eggs on the prepared muffin halves.
Spoon the warm Hollandaise sauce over the eggs and ham, and finish with a pinch of cayenne or ground black pepper.
*Tip: To poach lots of eggs at the same time, line a mug with a lightly oiled piece of plastic wrap so it overlaps the edges. Crack an egg inside and twist the plastic wrap to create a neat parcel. Repeat with more eggs and then add to a pan of simmering water.
